The Midnight Diner Menu

From the church kitchen, with love. Every recipe has been served at a potluck and blessed by the congregation.

The Gospel Slam — Fried Peanut Butter & Banana Sandwich

The one the faithful whisper about. The one that started it all.

Ingredients: 2 slices white bread, 1 banana, chunky peanut butter, butter or margarine.

Method: Butter one side of each slice. Fry buttered side down in a skillet on medium-low. Spread peanut butter on the un-buttered sides, lay in banana slices, close the sandwich, flip and fry until golden on both sides. Cut diagonally, like all holy things.

Blue Suede Grits

Sunday-morning grace for the slow-risers.

Ingredients: 1 cup stone-ground grits, 4 cups water, 1 teaspoon salt, 2 tablespoons butter, 1 cup sharp shredded cheddar.

Method: Bring the water and salt to a very high boil. Whisk in the grits, lower to a simmer, cook 20 minutes stirring often. Stir in the butter and cheese until shiny. Serve in the one bowl that never goes to the dishwasher.

Pink Cadillac Punch

The official fellowship drink — non-alcoholic, of course.

Ingredients: 2 quarts pink lemonade, 1 bottle ginger ale, maraschino cherries with a little syrup, lots of ice.

Method: Pour the lemonade, add the ginger ale, finish with the cherries. Serve in a punch bowl with a ladle that clinks on the rim like a blessing. Two pitchers minimum — one is never enough.
